11s - 8s - 1 = 14
11s - 8s - 1 = 14
+1 = +1
11s - 8s = 15
↓ ↓
3s = 15
3 3
s = 5

Think about "s" like it were apples. 11 apples - 8 apples is how many apples? 3 apples, right?
So 11s - 8s = 3s that makes the problem become: 3s - 1 = 14
You ultimately want to get to an answer that says s = "something", right? So that means the first step would be to get rid of the "-1". To do that, do the opposite of "-1" to both sides of the equation. That would be "+1" so add 1 to the left side of the equation and add 1 to the right side of the equation. That would mean the equation becomes:
3s = 15
Now, since you want it to say s = "something" we need to get rid of the "3" in front of the "s". Since the "3" and the "s" are being multiplied, to get rid of the "3", do the opposite to both sides, which is divide by 3. That would give you this:
3s/3 = 15/3
Since 3/3 = 1 the left side of the equation is just "s". And since 15 divided by 3 is 5, the right side is 5 so:
s = 5
