Imagine the following:
Water (hydrophilic) and Oil/grease (hydrophobic) can't mix. Soap (mix of hydrophilic and hydrophobic) to help the water and oil mix.
Similarly, the bile salt emulsifies the fat deposits to allow the entire molecule to run through hydrophilic plasma of the blood and reach the intestine to be broken down by enzymes specific for fats.
