Heated enzyme can be denatured = lose its function. Amylase is an enzyme to digest sugars in the mouth. When a boiled amylase still can function to digest maltose sugar normally, indicated by the positive test in the question, one conclusion can be that the boiled amylase did not lose its function due to heat.
