360 is used because it is the angle of a circle. Polygons are shapes that have equal sides and angles. A circle is a set of points that are equidistant from a main point. In addition, polygons are derived from circles because if you draw a polygon and increase the number of sides & angles infinitely, the polygon will eventually become more like a circle.
