Hi Jay,
In English, we use s for plurals, third person singular, and possessives, so it can be a bit confusing, even for native English speakers! I'll explain plurals versus possessives below.
Here is a cheat sheet:
Plurals: add s for most word endings; add es for words ending in ch, sh, s, x, or z
Examples: dog, dogs; match, matches
Possessives: general rule is add 's to the end of a word; for words ending in an s including plurals, add just an apostrophe
Examples: my mom's car; the boss' desk; Beverly Hills' celebrities
Note: it's/its is an exception to this rule; it's is the contracted form of it is; its is the possessive form
Examples: It is 3:00/It's 3:00; The bear stomped its feet
