There are several ideas as to why you feel the need to urinate in a Fight or Flight situation.
The simplest is that the FoF response causes all muscles to tense in preparation for action. The bladder is a muscle, so it tenses too, causing the need to urinate.
Another possibility is that the FoF response pushes the central nervous system to higher sensitivity. This means you notice the urge more quickly than in a relaxed situation.
Lastly, some believe that FoF causes an increase in urine production. This would be the body getting rid of excess metabolic waste coming from an increase in metabolic activity meant to provide the extra energy needed to survive.
The probable answer is some combination of all of these
