You can say Our coach forbids drinking instead of Our coach forbids us drinking. Our coach forbids us to drink is the more acceptable use, as an infinitive. Our coach forbids that we drink also sounds clunky (if you understand what I mean by clunky). It is understood that 'Our coach forbids drinking' would apply to his team members. I couldn't find a specific name for the use of 'us' with a gerund, drinking.
