We can determine atmospheric composition by observing the light that is absorbed by the object. Methane absorbs all light except green. Nitrogen absorbs all except blue. List goes on.
The only moon that has an atmosphere is Titan, moon of Saturn. Triton has geysers but the moon does not retain the material to create an atmosphere.
