Sensor size you are stuck with, BUT mobile cameras such as Samsung S10+ Pro mode you can shoot DNG files! this is a RAW format from the camera sensor which you can run through photoshop and lightroom and color grade same as a Canon DSLR .CR2 RAW file.

I think the answer is fairly simple and that is the same with all cameras. Take it off manual. It's as easy as that. You can refine the settings such as focus, iso and shutter from there.
