You might be thinking of a time lapse sequence. In a time lapse, a series of photographs taken over a long period of time is played back quickly as a video. Examples might include the blossoming of a flower or clouds passing by over the course of a day, each compressed to just a few seconds of video.
I usually build time lapses in Lightroom. However, doing so requires a special template for the slideshow module that can enable faster playback than is typically available. Playback speeds are usually controlled by the slide length slider in the playback panel of the slideshow module. The fastest speed there is one frame per second, but you need a much faster setting for a time lapse, such as 24 fps. Fortunately, there are third party templates and/or plugins available online that enable this faster playback. They effectively override the slide length slider. Some are free and others have a fee, but more features.
You can also create time lapses in Photoshop. As is often the case, Photoshop isn't as user friendly, but it offers more advanced features, such as the ability to do "Ken Burns" style pans across your time lapse.
