While all three phrases are correct, the difference is emphasis on distance from the speaker. “This” implies the object is closer to the speaker. “That” implies the object is farther away from the speaker. “This one” implies a specific one. Maybe there are many different things a person could take, but the speaker wants the listener to take a specific “one”
