I'm just not understanding: the product of 5 and the quantity of a number minus 8 equals 15

"the quantity of a number minus 8"  means (n - 8)

so now product (meaning result of multiplication) has two things being multiplied: 5(n - 8).

 

5(n - 8) = 15 is the equation that these words have described.
