The best way to learn is to practice. Organization in a paragraph means that you have a central thought (your thesis sentence), then two to three ideas that directly support that thought. Once you have your central thought. "Dogs are great" you then provide two to three sentences that explain/support/defend that thought. "Dogs are loyal. My last dog used to sleep in the hallway to make sure that he was protecting all of the family" "Dogs know when we are feeling bad. My dog Mac stayed by my side all day when I had the flu. He would check every now and then to make sure I was alive" If you are doing this for a literature class, make sure that your supporting arguments go with your central thought and do not rehash the book/poem/movie. So, remember: Central thought, supporting sentenes. Good luck!
