when looking at a velocity vs. time graph, how can one determine the total distance traveled as well as the displacement?

The total distance traveled will be total area between the curve and the time (x) axis. You add both the area above the x axis and below the x axis to get the total distance traveled. To get the displacement you subtract the area under the x axis from the area above the x axis.
