How do I set up sheets in Adobe Illustrator?

Go to the artboard palette and select "Add new artboard" at the bottom right corner, next to the trash can icon.

Go to the "Artboard" tool on your left hand side and select "Rearrange All" and you will have a clean set of pages to work on.

I'm guessing by Sheets, you mean artboards, in which case you can click on the artboard tool

Then you add the size and position of the artboard you want in the 'Properties' tab.
