Hello Daniel,
I believe that the distance to the top of the waterfall is 200 feet so in your triangle, that is the hypotenuse. The angle on the bottom of the triangle is 68 degrees. So to find the height of the waterfall, the equation would be
Sin 68 = h/200.
Solving for h, your answer would be 200 times Sin 68.
The width of the pool would be Cos 68 = w/200 and you would solve for w like you solved for h.
