This would be a single replacement / redox reaction where Cu2+(aq) is reduced to Cu(s) and Co(s) is oxidized to Co3+.
3CuSO4 + 2Co ==>Co2(SO4)3 + 3Cu ... balanced equation.
Note however that this reaction will NOT take place spontaneously since the reduction potential for Co3+ is greater than that for Cu2+.
