The water can hold only so much solute, and if you add an inorganic salt to water that already has an organic solute dissolved in it, the organic solute becomes less soluble. This then increases the partition coefficient in favor of the organic solvent in an extraction procedure. It boils down to solubility of the organic solute in water versus the organic solvent. Adding salt to the water "pushes" the organic solute out of the water and into the organic solvent.
