Suppose that out of those 120,56  preferred Diet Pepsi. Test the hypothesis, using α=0.01 that more than half of all participants will select Diet Pepsi in a blind taste test by giving the following. n=120, x=56

The p-value for the test is 0.767. Since p>α , you would fail to reject the null hypothesis. There is not sufficient evidence to support the claim that more than half prefer Diet Pepsi over Diet Coke.
