You could say a couple different things. ฉันดีใจที่ได้เจอ (chan dee jai tee die jer) means "I'm happy to meet you." You can also say ฉันดีใจจริงๆที่เราได้พบกัน (chan dee jai jing jing tee die pob gan) which means "I'm really happy to meet you."
One thing to keep in mind is that you should always indicate politeness, especially when interacting with somebody you just met. Thai language has a specific words for indicating politeness which are placed at the end of the sentence.
For male identifying people, you end your sentence with ครับ or ครับผม. The transliteration into English is "krop," and "krop pom," respectively.
For female identifying people, you end your sentence with ค่ะ. The transliteration into English is "ka."
