If your tables exceed one page by only a little, decreasing the margin size increase the space available for them to reside on a single page. Additionally, font size, font compression, adjusting row heights & column widths, removing extra line breaks, and editing your text (if possible) will all contribute toward smaller tables.
To select an entire table at once instead of per row, first highlight the table, then look for the small cross box in the upper left corner of the table and select it. To edit table properties, right-click the table and select "Table Properties" at the bottom of the menu. Here you will find a plethora of choices to experiment with.
