How is that it's impossible to prove a negative, while maths do it frequently (e.g., you can prove that two parallel lines never cross each other)?

Parallel lines by definition do not intersect - at least in Euclidean Geometry.

Mathematics does not prove the negative. It may assume that the inverse is true to prove by contradiction.
