You can't really "calculate" such a ratio, but if you know the amount of enzyme (either in mg of protein, or in moles) you could then obtain this ratio by dividing the moles of product formed per unit time by the moles or mg protein of enzyme. Not really sure what you are trying to get at, but this is the best answer I can offer without additional information.
