There are many reasons for this that can be explained everywhere from the business structure to human nature. Worker co-operatives tend to lack leadership and structure unlike a private entrepreneurial business. A private business is more efficient as there are leaders who will keep their workers on the right path.
Also, assuming that people are motivated by self-interest, a private business will be able to compensate their workers/contributors (stakeholders) based on what they deserve. Meanwhile, a worker co-operative may face many issues with compensation and motivation.
