Y=x^2 -6x-8

In order too complete the square you need to look at the value with x.  The square would look like x^2+2bx+b^2.  The value with x is -6 Which ids twice the value you are looking for so your "b" is -3.  B^2 would be 9. So to complete the square you had too add 9 soon to keep the equation balanced you have to subtract 9 giving you the following.

y=(x^2-6x+9)-9-8

y=(x-3)^2-17
