Yes, most cameras nowadays (even DSLR's) can give you raw video so you can have total control over the image in post. You will need to convert/process the footage at some point to make it viewable though, but most editing systems let you work with that format so you can color correct after editing for instance.
Be aware your video files will be very large and you will need a lot of power on you computer to be able to edit and color correct comfortably.
Nowadays, most professional video makers will shoot raw and "flat" so they can later decide the color scheme of the imagery.
