Amphipathic simply means that they have both hydrophobic and hydrophilic ends, which lipids, especially phospholipids do. Biological membranes are composed of a lipid bilayer where the lipid molecules are organized in 2 layers where the hydrophobic tail regions face away from water and the hydrophilic regions face toward water. This structure forms the layer that is the wall or barrier between the inside and outside of the cell.
