Why do we assume Normal distribution in statistics?

The heights of a certain type of tree can be assumed to follow a normal distribution. How comes on cannot say, the heights follow a normal distribution? Why should we make the assumption?

Thanks, but why can’t I just say that something follows a normal distribution? why do I specifically have to use the word ‘assumed’?

In my opinion, statistics differs from mathematics in that various practical assumptions are made, based on experience, in statistics, whereas in mathematics we deal with rigorous proofs. (Both use precise definitions and mathematical formulations, however.)
