Can you use the Third Angles Theorem to prove that two triangles are congruent?

The third angle theorem deals only with proving that the third angle is congruent not the actual triangle.
A real way to see this is by making two triangles with the same angles but whose sides are sizeably bigger.

That being said if you also have one side that is congruent along with the third angle theorem then the triangle would be congruent, but you would really be using AAS (angle-angle-side)

Not by itself. If two triangles have equal corresponding angles, then they are similar - they have the same shape but not necessarily the same size.
