Let's say you wanted to put as much of a salt into a solution as possible (meaning you want it saturated). If you know the solubility, you would know how much to put in the solvent to achieve saturation. If you don't, you have to guess. If you guess too little, it won't be saturated. If you guess too much, you will waste a bunch that won't dissolve but just sit on the bottom of the solution undissolved.
