If yes, to answer the situation you need to consider two options.
1. The pie is putting in the airless box and vacuum pump continue work. That will lead to complete degassing of the pie and will be no smell after a short time.
2. The pie is putting in the airless box, but without vacuum pump's work. That will lead to degassing of the pie up to equilibrium pressure and the detector reads the smell; moreover, if the box will be opened, you can feel the pie smell.
