1) Legal Firm -- Generally, they are likely to have an hourly rate (based on the number of hours you spend with a lawyer from their firm) + servicing fees + administrative fees + (where applicable) a retainer fee (this is where you anticipate calling a lawyer often. You can pay this upfront and 'redeem' their services over time).
2) Restaurant -- You pay for the amount you eat and/or drink plus the tax. The tip you provide is optional to additionally compensate your server for their service
3) College -- You pay a lump sum upfront for upto a certain number of courses and the college 'experience'. This includes the activities, security, classes, most events, etc. You may also pay additional fees if you live on-campus for housing and/or for a dining plan.
