NaHCO3 + C6H8O7 -> H2CO3 + NaC6H7O7
One of the hydrogen atoms leaves the citric acid molecule as H+, and sodium bicarbonate dissociates into sodium ions (Na+) and bicarbonate ions (HCO3-). Some of the sodium ions associate with citrate ions (C6H7O7-) to form sodium citrate (NaC6H7O7) while the free H+ is picked up by the bicarbonate ion to form H2CO3.
