Perhaps you have something new here! Yes, it is possible to carbonate mashed potatoes. You can easily do this by adding carbonated water to the potatoes as you mash them. But remember that you will lose much of the carbon dioxide if you add the carbonated water to the hot potatoes. You will have better luck with cold, boiled potatoes. Also, you may try a little sodium bicarbonate (Baking soda) with a couple of drops of vinegar. Good luck!
