One of the most important things you can do when creating a video is capture high quality audio. The rule of thumb is that you can get away with lower quality video if you audio is solid.
For this instance, I would definitely recommend using a wireless lav mic. He or she will be very mobile and need that flexibility, especially if they're counting the steps.
Hopefully your camera is capable of recording multiple channels of audio, but I would go with the instructor mic over anything - it can always pick up other sounds in the room as well.
