x-y=5 is the same as y=x-5, which for x=0 gives y=-5

-y = -x + 5 is correct, but when you multiply both sides by -1, you have to multiply both the x and the 5 by -1. So -y = -x + 5 becomes y = x - 5 as Michael showed you. Slope is 1, y-intercept is -5.
