Most coins were minted in Latin and to a lesser extant Greek. That said, minting of coinage did occur in the provinces and under allied kings. The Putah in Palestine would be one such example. It was minted by the Hasmoneans and continued up through the first century. It was mostly in Greek, but there are some in Hebrew.
Outside of the Roman Empire, of course, many were striking coins in many other languages. Are you only interested in the imperium? Otherwise, lookup Sasanian coinage as a starting point.
