How can I creare a form in MS Access that does not show the number of records?

In the form properties you can turn off the "Navigation Buttons" (which are turned on by default). This setting can be found under the "Format" tab in the Property Settings panel.

This will also eliminate the navigation controls. If you still want those abilities you could add buttons directly to your form to perform the needed functions.
