This is due to the amount due to the transfer of heat across different materials. When you touch the surface of wood, heat from your hand is transferred across to the surface of wood. Due to the wood being porous, the surface area is minimized. With metal, however, every area of your hand that touches the metal has heat directly being transferred.
This same concept is the same for why a hardwood floor feels colder than carpet. The carpet is porous and has large volumes of air that decreases contact between your skin and the carpet fibers. With a hardwood floor, heat from your skin is directly transferred to the floor.
