It would depend how long you kept them there. If you had a thin layer of, say, vaseline on your hand, you MIGHT be able to stick it into liquid nitrogen and pull it out quickly enough to avoid permanent injury. Too long, and you risk freezing your flesh, which will kill the cells. Also, you MIGHT be able to jam it into molten lead and pull it out before enough heat is transferred to your hand to burn your flesh. You can run your fingers through a candle flame, which is much hotter than molten lead, without permanent injury.
