Latin didn't technically die, instead it evolved into several languages that are still around today: Italian, Spanish, French, Portuguese, and the like. When people refer to Latin as a dead language, they are referring to how many scholars and churches preserved the ancient version of Latin through writing and religious services which was quite different than the evolving languages actually being spoken by native speakers around Europe.
