I am studying for a pre-calc. final. I am stuck on the question y=3e^x-2. I have gotten the answer through desmos but am struggling to solve the problem on my own. Any help appreciated, thank you.

If you can draw the graph of y=ex, you should not have difficulties with y=3ex-2. Basically, this is the same as ex just multiplied by 3 and shifted by 2.

I know I am supposed to apply logarithms somewhere in the process but do not know where

In principle, no need for logarithm. But if you'd like to use logarithm, then you can do following:
y=3ex-2. So (y+2)/3=ex, then log(y+2)-log(3)=x. Does it help?
Once you take log, you will have a different function. logy instead of y.
