Let n = number sold new cars
u + n = 17
7000u + 16000n = 191000
Let's reduce this by factoring out 1000
7u + 16n = 191
From 1st equation; u = 17-n
Substitute into 2nd equation:
7(17-n) + 16n = 191
119 - 7n + 16n = 191
119 + 9n = 191
9n = 72
n = 8 There were 8 new cars sold
u = 17-n = 9 used cars sold
Check: 9(7000) + 8(16000) = 63000 + 128000 = $191,000

I assume you understood how we got
u = 17-n
from the fact that the total cars sold was 17
This was then substituted into
7u + 16n = 191
This gives the equation:
7(17-n) + 16n = 191
Distribute the 7 through the parenthesis:
7(17) + 7(-n) + 16n = 191
119 - 7n + 16n = 191
combine like terms ... -7n + 16n
119 + 9n = 191
subtract 119 from both sides
9n = 191 - 119
9n = 72
divide both sides by 9
n = 8 new cars sold

Ohhhhhhhh ok now i get it!
So its:
u = 7
n = 16
17-y = x
7x + 16n = 191
7(17-n) + 16y = 191 (7 x 17 = 119)
119 - 7n + 16n = 191 (7 - 16 = 9)
119 + 9n = 191
9n = 72 (119 - 191)
n = 8 (9 / 72)
8 - 17 = 9
u = 9
