What is the name of a function that has no equation

I've heard that the amount of snowfall is a function of date. This makes sense to me as there is only one specific date, so therefore the date does not produce two different outputs.
But if you were to plot the amount of snowfall and the date you wouldnt be able to find a relationship between the days. So is it possible to have a function where you don't know the relationship and if so what is it called?
