Can't I then simplify that? To x - 4y = 5?

Absolutely!  Great question.  Since all the number-looking thingy's, as my friend likes to call them, are multiples of 3 -- they all have a GCF of 3 -- you can go ahead and divide both sides of the equation by 3 which will reduce them to what you've written.  Remember the BIG CONCEPT of algebra is always to keep the balance of any equation by doing the same thing to both sides (or I guess something tips over or falls off like a see-saw, lol).
