If you are open to all foods; sliced turkey and chicken go great on sandwiches, you could add some ham or meat to your potato salad, hardboiled eggs (included those used in egg salad), tuna as well. If you are okay with dairy; yogurt, and cottage cheese are good options as well. If you are vegetarian or vegan; chickpeas, lentils, and adding pea-based protein powdered supplements to your salad mixes are additional options!
