High glycemic index foods raise the blood sugar level quickly. As a consequence of this fast blood sugar level increase, insulin levels quickly rise in order to pull the level back down to normal range. This can have several short-term effects including a rapid hypo-glycemic consequence as too much sugar is removed and stored in muscle and the liver, and also the conversion of the extra glucose from the high glycemic index foods into fat as stores within the muscle and liver may already be replete.
The long-term effect of a diet containing many high glycemic index foods is type II diabetes. This comes about from the tissues becoming insulin resistant.
