The key to playing fast and not losing control is to first repeatedly play slow for a while. Imagine you're playing in slow motion. Go through each motion of your hand and fingers repeatedly like this and your muscle memory will develop. Then you can start to speed up over time. If you skip this you will likely only learn how to play fast but *not* controlled. It's amazing how much time the greats spend doing things like this. We only see them perform and do impressive runs, but we never see them sit at their pianos and play the same thing over and over again super slowly for 6 hours straight every day. But that's exactly how they became so great.
