Incoming photons of light are absorbed by a loosely bound electron in the metal (the "loosely bound" electrons are the sames one involved in conducting electricity through the metal), giving it enough energy to be liberated from its atom and leave the surface of the metal. This entire process is called the photoelectric effect.
