Conservation of mass is one of three fundamental 'conservations' in continuum mechanics, the others being energy and momentum. If you have a closed system where no mass or energy can escape, the amount of mass must stay the same over time. The energy flow constraint is necessary is because mass and energy are interchangeable by virtue of E=mc^2.
